This week’s #CookieKindness box was filled with Pecan Pie Bars and went to Clarissa R. in Gilbert, Arizona. She was nominated by my sister-in-law Kelsey V. who lives in Reno, Nevada.
The first time I met Kelsey she had just gotten a new Sailor Moon tattoo, and if memory serves me correctly it was on her wrist. Now, we keep in touch through Facebook and texting each other book recommendations or new dinner recipes to try.

If you’ve never visited Arizona I highly recommend it. It’s beautiful. The Grand Canyon takes your breath away, hiking in Sedona brings you a new kind of peace, and floating down The Salt River is exactly where you want to be on a hot afternoon.
Arizona is not like California OR Texas OR Nevada desert. I mention this because it was the type of desert I expected, which isn’t even close to Arizona desert. Never did I ever think I’d love Arizona, but here we are…
I’ll be honest, pecan pie is my FAVORITE pie. Actually, it’s the only pie I’ll eat. Those other pies never really did it for me, so there’s almost no chance these pecan pie bars won’t taste like a dream.

They were extremely chewy. I’m not sure if it’s because I didn’t use the proper sized pan so it spread everything out too thin, or if I need to drop the amount of Karo syrup to only 1 cup.
Overall? They didn’t suck. I’d totally make them again.
